Alaskan Cod And Shrimp With Fresh Tomato

• 2 tbsps. olive oil
• 6 cloves garlic, minced
• 5 large tomatoes, chopped
• 1 tsp. dried oregano
• 1 lb. Alaskan cod
• 1/2 lb. large shrimp, peeled and deveined
• salt to taste
• 1 tbsp. dried oregano, or to taste
• On medium high heat, in a skillet, heat the olive oil; cook and stir the garlic
in the oil till golden brown, avoid burning the garlic. Put in the tomatoes and
stir it well till their juices are released. Mix in 1 tsp. of oregano.
• On the tomato mixture, add shrimp and cod; use salt to season. Cover the
skillet and let simmer for 3 minutes. Turn the cod and season again using 1
tbsp. of oregano and salt; cover again and cook for 3 minutes longer. Take
out the cover and let cook for 2-3 minutes till the juice evaporates a bit.
