• 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
• 1 cup sharp Cheddar cheese
• 1/3 cup dry bread crumbs
• 1 egg, beaten
• 1 lb. cod fillets
• salt and pepper to taste
• Preheat an oven to 165°C/325°F.
• Mix egg, 5 tbsp. dry breadcrumbs, 1/2 cup cheddar cheese and spinach in a
bowl. Spread mixture in bottom of a small baking dish. Put cod fillets over
spinach mixture. Season with pepper and salt. Put leftover breadcrumbs and
cheddar cheese on top.
• Cover. In preheated oven, bake for 20 minutes till fish easily flakes with
