Pacific Salmon With Roasted Garlic

Serving: Serves 8
• 2 medium heads garlic, broken into separate cloves, peeled
• 1/2 cup (about) olive oil
• 3 tbsps. unsalted butter
• 8 6- to 7-oz. salmon fillets
• 4 tsps. fresh lemon juice
• 4 tsps. chopped fresh rosemary
• Prepare the oven by preheating to 400 degrees F. In a ramekin, put the
garlic. Cover with enough oil. Use a double thickness of foil to wrap the
ramekin. Bake for about 35 minutes until the garlic is very tender. Put the
garlic into a food processor with a slotted spoon then add 1 tbsp. cooking oil.
Put butter to the processor; puree. Add pepper and salt to taste.
• Prepare the oven by preheating to 450 degrees F. Put salmon on a baking
sheet. Add pepper and salt to taste. Dot each fillet with 1/2 tsp. lime juice and
put 1 tbsp. garlic puree over each and spread. (You can prepare 1 day in
advance; chill.)
• Bake salmon for about 15 minutes, uncovered, just until cooked through.
Dust with rosemary all over and serve.
