Rick’s Sauteed Salmon Over Quinoa

“A lovely salmon recipe.”

Ingredients
• 3 tbsps. olive oil, divided
• 1 (3 oz.) fillet salmon fillet
• 1 shallot, finely diced
• 1 clove garlic, thinly sliced
• 4 oz. fresh spinach, roughly chopped
• 1/2 cup cooked quinoa
• salt and ground black pepper to taste
• 1 lemon wedge
Direction
• Heat skillet on high heat. Add 1 tbsp. olive oil then salmon; cover. Cook for
4 minutes.
• Heat a separate skillet on medium heat. Add garlic, shallot and leftover
olive oil; cook for 2 minutes till slightly browned. Add spinach.
• Flip salmon; cook, uncovered, for 4 minutes till fish flakes with fork easily.
Toss spinach till wilted; add quinoa. Use pepper and salt to season; stir well.
• Put spinach-quinoa mixture on plate; lay salmon over. Add lemon wedge.
