Scallops And Tri-color Peppers Schaul

Serving: Serves 4 to 6 as a first course
Ingredients
• 2 tbsps. extra-virgin olive oil
• 2 large green bell peppers, sliced thin
• 2 large yellow bell peppers, sliced thin
• 2 large red bell peppers, sliced thin
• 2 tbsps. dry white wine
• 1/2 lb. bay scallops, rinsed and patted dry
• 2 tbsps. minced fresh basil leaves or 1 tbsp. crumbled dry
Direction
• Bring oil to moderately high heat in a big skillet until hot but not releasing
smoke; sauté and stir bell peppers in oil for 2 minutes. Pour in wine and cook
the mixture for 60 seconds. Put in black pepper, basil and scallops to taste
and cover and cook for 2-3 minutes on moderate heat until scallops are
cooked thoroughly.
