Sponge Cottage Cheesecake

Servings: 4
Ingredients:
● 1 cup cottage cheese
● 3 egg yolks
● 1 cup sponge cookies, crushed
● ¼ cup butter
● 1 teaspoon sugar
● ¼ cup brown sugar
● 1 teaspoon stevia
● ½ teaspoon vanilla extract
Directions:
1. Combine the cookies with stevia and butter in a bowl.
2. In another bowl, whisk the egg yolks with sugar and add the vanilla
extract.
3. Transfer the cottage cheese to the blender and add the egg yolk
mixture.
4. Blend the mixture until smooth.
5. Add the butter and blend it for another minute.
6. Place the cookie mix in the Instant Vortex air fryer pan.
7. Add the cottage cheese mixture on top.
8. Preheat the air fryer to 380ºF and transfer the cheesecake in to the
air fryer.
9. Cook for 15 minutes or until the surface browns.
10. Remove the cheesecake from the air fryer and let it cool slightly.
11. Remove the cheesecake from the form, cut it into pieces and serve.
